Cucumber & Tomato Salad

with mint yogurt dressing

Craving something cool and refreshing to eat on one of those hot summer days where all you want to do is laze around? Then this Cucumber and Tomato Salad with a Mint Yogurt Dressing is the perfect main or side dish to gorge on with minimal prep and zero cook time.

Tomatoes and cucumbers have been a favorite of mine since forever. I love the sweet, savory, and somewhat sour taste of flavors that explode from the meaty tomato in a medley of balance alongside the refreshing crispness of the crunchy cucumber. There is a natural combination of pure yumminess between these two simple, yet earthy ingredients.

Cucumbers in general have a mild, almost watery flavor to them that are similar to melons and I love eating them peeled with a light sprinkle of salt and pepper. The same goes with tomatoes. I tend to grab them fresh when grown and eat them as if they were an apple. Nothing beats a homegrown tomato fresh from the garden that has been kissed by the sun.

There is something special about summer, cucumbers and tomatoes that go hand in hand. Add in a dollop of the mint yogurt sauce and you will have a surely enjoyable lazy afternoon of a little fun in the sun on your hands.

Ingredients:

  • 1 English Cucumber, pealed and sliced
  • 1.5 lbs. Small Tomatoes, sliced
  • 5.3 oz (1 small container) of Plain Greek Yogurt
  • 1 Tbsp. Sour Cream
  • ½ c. Chopped Mint
  • 1 tsp. Garlic, minced
  • Salt/ Pepper

Directions:

  1. Peal and slice the cucumber. Wash a slice your tomatoes. Add both to a large bowl. Season with a little salt and pepper and toss together to mix. In a separate bowl mix together the mint, sour cream, yogurt and garlic.
  2. You can either add it to the tomatoes and cucumbers or you can add a dollop once the cucumbers and tomatoes are plated.
  3. Serve cold.
