Oven Roasted Carrots
with spicy honey glaze

Whether they are baby sized, or large, roasted, baked, or raw, carrots are one of the most popular ingredients used in cooking or eaten as a snack by people. I love carrots. There is something extremely special about these vibrant orange root based vegetables that have an amazing taste with a nice crisp texture. They bring a fresh crunch to a basic veggie tray or add that extra oomph of yummy to a stew or soup. In order to take this simple root from ordinary to extraordinary is quite simple with this spicy honey glazed recipe. Any roasted vegetable is delicious, but there is something out of this world delicious that happens with roasted carrots. They take on a beautiful and succulent flavor with a caramelized texture, similar to a roasted sweet potato. The glaze marries well and creates a nice balance of sweet and spicy that jazzes up the carrots. This is the perfect dish that can be served during the week for dinner or as a side dish during the holidays. Yum, Yum, and a double YUM!

 

Ingredients:

  • 25 French Cut Carrots
  • 3 Tbsp. Honey
  • 1 Tbsp. Apple Cider Vinegar
  • 2 Tbsp. Olive Oil + extra for drizzling
  • 1/2 Tbsp. to 1 Tbsp. Red Pepper Flakes
  • Salt/Pepper to tast

 

Directions:

  1. Preheat oven to 400 degrees.
  2. In a bowl mix the carrots some olive oil and salt and pepper to taste.
  3. Place on a baking tray and roast in the oven for 25-30 minutes.
  4. Prepare the glaze. IN a small bowl mix together the honey, apple cider vinegar, olive oil and red pepper flakes. Blend with a whisk until incorporated. Set aside.
  5. Remove carrots from the oven the last 10 minutes of cooking and pour the glaze over them shaking the tray to make sure they are completely covered. Place back in the oven and finish baking.
  6. Remove and serve warm!
