Roasted Chicken Salad

with toasted walnuts and grapes

I am a good cook and enjoy cooking and baking, but even I have not found the secret to creating the perfect rotisserie chicken. Good thing I live next door to an amazing grocery store that not only sells the most enticing rotisserie chickens, but also keeps them stocked around the clock. They are a healthy alternative that can be used in a variety of ways for meals, which makes my life easy because sometimes, even I don’t feel like spending hours slaving over a hot stove.

One of my favorite recipes to make from a rotisserie chicken is my chicken salad. Not only is it quick to make, but extremely delicious and to be frank, quite addicting. Basted in their own fats and juices from rotating on a spit for a few hours, rotisserie chickens have a rich and delectable taste perfect for this recipe. The important thing to remember about chicken salad is there needs to be a perfect balance of savory chicken, to sweet grapes, to crunchy celery and walnuts, and dressing. You cannot have one without the other or it will just make it boring and who wants boring chicken salad. Don’t like grapes? Not a problem! Substitute the grapes with tart green apples, or dried cranberries. Not into walnuts, then used shaved almonds instead.

The tangy zig of the dressing is a nice finishing touch that brings the entire dish together. In the past, I would use just mayonnaise, but I noticed from trial and error that the Greek yogurt adds a special panache when mixed with the sour cream that the mayonnaise lacks. All in all, this is a very rich and yummy dish that tastes like a million bucks.

Ingredients:

  • 1 Rotisserie Chicken, deboned and shredded
  • 1 c. Grapes, halved
  • 1 c. Celery, chopped
  • ½ c. Toasted Walnuts, chopped
  • 1 bunch of Parsley, chopped
  • 1/3 c. Scallions, chopped (optional)

Salad Dressing:

  • 8 oz. Sour Cream
  • 5.3 oz. Plain Non-Fat Oikos Greek Yogurt
  • 1 Tbsp. Honey Dijon Mustard
  • ½ Tbsp. Horseradish
  • 1-2 Tbsp. Lemon Juice
  • 2 Tbsp. Real Mayonnaise
  • Salt and Pepper to taste

Directions:

  1. Debone the chicken and shred the meat. In a bowl mix together all the ingredients. Set aside.
  2. In a separate bowl, mix together the salad dressing ingredients.
  3. Add the salad dressing to the bowl of chicken and mix until coated. Cover and chill for 1 hour.
  4. Garnish with the freshly chopped scallions and serve.
