Spicy Cranberry-Pepper Jam Turkey Sandwiches

Let’s face it.  There is a lot of turkey made on and around the Thanksgiving holiday.  So how do you spice it up after the gluttonous food induced coma has worn off?   With this Spicy Cranberry-Pepper Turkey Sandwich with Melted Brie on Toasted Brioche of course!

Turkey alone is probably one of the tastiest meats out there.  But add in melted Brie and spicy cranberry-pepper jam, well it is like Thanksgiving, every day, all day!  So sit back, enjoy the football games and munch on this tasty ole sucker of a sandwich!

 

Ingredients:

Cranberry-Pepper Jam:

  • 3 red bell peppers, finely chopped
  • 2 Fresno or red jalapeño chiles, seeded and finely chopped
  • 1 c. sugar
  • 1 ½ tsp. crushed red pepper flakes
  • ½ tsp. kosher salt
  • ¼ c. liquid pectin
  • 1 Tbsp. fresh lemon juice
  • 3 c. cranberries, fresh or frozen and thawed

Turkey Sandwich:

  • 2 Slices, Toasted Brioche Bread
  • 4 Slices of Brie, thick cut
  • 8 Slices of Roasted Turkey, thick cut
  • 2 Slices Tomato
  • 2 Large Leafs of Green Leaf Lettuce

Directions:

Make the Cranberry-Pepper Jam by combining peppers, chiles, sugar, red pepper flakes and salt in a heavy wide pot over medium heat and bring to a simmer, stirring to dissolve sugar. Stir in pectin and lemon juice. Reduce heat and simmer gently for 10 minutes.  Stir in cranberries and simmer gently until they burst and juices thicken, about 10 minutes longer. Transfer jelly to a jar, let cool, and cover.

Once the jam is made, assemble the sandwich by toasting the bread slices.  Layer the lettuce, tomatoes, turkey, melted Brie, cranberry-pepper jam and top with the second toasted slice of bread.  Serve warm!
