Whipped Guacamole

It is hard to imagine my life without guacamole. Dramatic, but true. Avocados to begin with are an awesome fruit with their own nutty, velvety, and unique taste. They are a staple in my refrigerator year round because they can pretty much be used alongside any meal for breakfast, lunch, or dinner. What is better than an avocado? Guacamole. Guacamole is the holy grail of dips and probably the most favorite among guests when at a party.

I have perfected my guacamole dip throughout the years. I learned quite fast that there is a science to guacamole and people take it serious. Any schlub can mix ingredients together and call it good, but that just doesn’t work with guacamole. There needs to be a balance of flavors between all the ingredients used. There have been many instances where I have eaten guacamole in the past and there was either too much of this or that making it a total disappointment (insert frown here).

Normally, I would never use goat cheese in guacamole, since I prefer more of a rustic chunky guac made with fresh ingredients. So to say I was extremely surprised that my boyfriend loved this recipe, is an understatement. Not believing that it was that good and he was just pulling my leg, I tasted it myself and was quite shocked that not only was it delicious, but it was creamy beyond belief with a taste unto itself.

Goat cheese has a very natural and distinctive mild tang to begin with and can be over powering when used with certain ingredients. However, something quite amazing happened when mixed with the guacamole ingredients. Everything blended together creating this tangy and spicy dip that was out of this world delicious. Rather than over powering, the goat cheese was able to enhance the simple ingredients used by making the notes of each sing in their own way. I was literally able to taste everything with one simple bite. This is definitely more of a “fancy” dip, but one I am sure going to be using in the future. I am so glad I had a wild hair that day in the kitchen and decided to get a little crazy by adding goat cheese to my guacamole because it made it damn good.

Ingredients:

  • 2 Large Avocados, peeled & chopped
  • 2 oz. Goat Cheese, softened at room temperature
  • 1/2 Red or White Small Onion, chopped
  • 1 Bunch of Cilantro, chopped
  • 1 Tbsp. Red Pepper Flakes
  • 1 Tbsp. Garlic, minced
  • Juice of 1 Lime
  • Salt/Pepper to taste

Directions:

  1. In a food processor pulse the chopped avocados, goat cheese, and lime juice until roughly blended. Add the remaining ingredients and pulse until blended into a smooth “chunkiness.”
  2. Cover and chill for up to one hour and serve!
